Thats just plain weird that I would learn clerical spell knowledge off someone casting stone skin, which is a spellcast enchant spell.

If I remember correctly, spell knowledge is what lets you see the actual name of the spell being cast instead of 'fah' or the other such gibberish used in spells. So notching it on stone is normal.

It seems that you can notch clerical and sorcerous knowledge off any spell. The only area where this is realy wierd is for rangers. Since rangers are the only class to get both cerical and sorcerous spell knowledge they often notch sorc knowlegde off heals and such and vica versa.
